In Spanish, a ‘Maestro’ is a male teacher.
Master is a teacher, but also a worker, an artisan qualified to teach apprentices, as well an artist, performer or player of great skill, or a great figure of the past (such as in science or art) whose work serves as a model or ideal.

In the olive industry, the job of the Maestro is one of the key positions in the factory. It is a mixture between a teacher, artisan and chef, but they are also a team leader.
The Maestro will be in charge of many details during the process; one of the most important stages will be the curing process during the harvest season.
This is a position developed after many years of experience; there is no course, book or training manual for learning about this profession. ARTISAN.
Manolo Marchena is our Maestro, he is 61 years old and began to work in Losada 39 years ago.
He is part of the team, and almost part of the factory.You can find him at Losada, between the drums, managing the fermentations or curing the olives, always with a smile on his face!
