Goat: Garrotxa (Catalonia), Spain
Made from pasteurized goat's milk, semi-firm cheese, it is rich in
taste with a smooth paste and a moist, creamy texture, but
almost flaky. It is covered in a layer of velvety gray mold
which gives it a woody scent. Moist earth, notes of walnut and herbs.
Sheep: Idiazabal (Basque Country and Navarra), Spain
Smoked cheese made with raw milk from latxa or carranzana sheep.
Vaca; Parmigiano-Reggiano (Italy):
Aged for a minimum of 12 months and a maximum of 36, it is a cheese
hard, dry and crumbly that has a great crisp and deep flavor,
con nutty flavor.
